Recipe: Cauliflower soup

Now this recipe is a true winner! It is is not only easy to make, it is also deliciously comforting and (kind of very) healthy.

Say what?

One of my favorite things to do is to scroll the Buzzfeed food pages and get me some inspiration.

I must admit, I won’t always follow the recipes because they are American and thus often use products that I don’t have in my kitchen.

Also, nobody likes difficult after a long day at work.

Are you ready for this? It so easy, you wouldn’t want to try anything else anymore.

The ingredients that you need:

  • 1 cauliflower
  • 1 big onion
  • 1 cup of cheese spread
  • Some salted butter
  • 1 liter of water
  • 1 chicken stock cube or vegetable (whatever you feel like)
  • Grated cheese
  • Bacon

How do we make this?

Chop your onion into pieces. Don’t worry, it mustn’t be all chopped up into little pieces.

Chop your cauliflower into pieces.

Put your big pan on the stove, heat the butter in the pan and add the onion to the pan and just fruit it.

Then throw in the cauliflower and let this fruit also, about 5 min is more than enough.

Now, you would want to add the cube for the chicken stock and a liter of water.

Let it cook for about 20 to 30 min. Now during this time I would advise you to watch some Netflix or tv. Go ahead, be gentle for yourself.

After maximum 30 minutes take the pan of the stove and add a cup of cheese spread or more if you want to (don’t tell anyone, but I sure as hell added a little more).

Mix it all up with your immersion blender or your regular blender.

Cook the bacon till it’s crunchy.

Pour the hot soup in a bowl, add a lot of grated cheese and some nibs of your crunchy bacon.
